Beetroot & Rasberry Salad!

Beetroot is definitely an acquired taste, but we cannot even begin to list out all of its benefits for our bodies! Beets provide better stamina, lowered blood pressure, and even improved blood flow. Personally, beetroot is definitely not our go-to ingredient, but with the help of cucumbers and raspberry, it is definitely more digestible. 

Beetroot and Raspberry Salad
SERVES 2-3

Ingredients:

For the salad:
1 cup cucumber, sliced
¾ cup beetroot, cooked
¼ cup fresh feta
1 red onion, sliced
3 tbsp fresh dill
2 tsp olive oil
Pinch of Basil

 

Dressing:
5 tbsp raspberry vinegar
3 tsp sugar
1 tsp salt
1 tsp lime zest

 

Directions:

1. Add all of the ingredients for the dressing into a bowl and whisk to combine then divide into two bowls and set to one side.

2. Slice the cucumber and beetroot finely then add each to one bowl of the dressing and leave to marinate for 10-15 minutes.

3. To plate up the salad layer the cucumber slices and add beetroot slices the feta cheese on top.  For a little extra flavor add basil.

4. Optional garnish: add red onion and dill pepper before serving with a little olive oil drizzled over the top.
