Every time we hear the word "scallops" - we hear Gordon Ramsey! (For you non-cooking show peeps, we are referring to Hell's Kitchen.) Now, we are definitely not as good as Chef Ramsey, but with this recipe, we don't need to be. Impress your friends at your next get together with this elegant, yet simple, recipe!
1 lb fresh scallops
½ cup freshly squeezed orange juice
2 tsp ginger, minced
2 tsp olive oil
1 tsp grated orange peel
1 tsp dried rosemary
½ tsp salt
1. To make the sauce combine the freshly squeezed orange juice, ginger, orange zest, dried rosemary, and the salt then stir and set to one side to marinate.
2. In a saucepan, gently heat the orange and rosemary sauce for 5-8 minutes or until the liquid has reduced to half its size and slightly thickened.
3. While the sauce in cooking heat the olive oil in a skillet or frying pan then on a low heat cook the scallops for 2 minutes on each side.
4. Plate up the scallops and drizzle on the sauce then serve while piping hot.
